Autumn… grape season!
Ingredients
- 200 g grapes of your choice (I recommend halving them and removing the seeds)
- 200 g semi-wholemeal soft wheat flour
- 100 g sugar
- 3 eggs
- 150 g corn oil
- 1 sachet of baking powder
Whisk the eggs and sugar together, then pour in the oil in a thin stream, continuing to mix until combined. Gradually add the flour, stirring all the time, then add the baking powder.
The mixture should be neither too stiff nor too runny.
Line a muffin tin with paper cases, then fill each case around 3/4 full with the mixture. Place 4 or 5 grapes on top of each muffin.
Bake in a conventional oven at 180°C for 15 to 20 minutes, depending on your oven.
Once baked, the muffins can be dusted with icing sugar.
Enjoy autumn. These little cakes go well with a glass of wine!
